(Local) More Top Hotels Reject Shark Fin Soup
Most establishments still serve the controversial dish, however.
A recent survey of hotels in Beijing, Shenzhen, and Fuzhou found that an increasing number of the cities luxury establishments are refusing to serve shark fin soup. The research was carried out by the Green Beagle Environment Institute, which is campaigning to have the dish removed from all menus, and a representative said the improved figures show that more know how cruel shark fin soup is.
China is the biggest consumer of shark fin in the world, and the ingredient has been used in local cooking for over five centuries. Environmental campaigners have hit out at shark fin soup and called for a ban on it, as they have found that many fishermen cut the fins off hundreds of sharks and then throw the fatally injured animals back into the ocean.
The survey shows that there is still a long way to go for the campaigners, as only 6% of the hotels surveyed refused to serve the controversial dish. The survey reminded us there is still a long way to goKbut the improved situation in Beijing is encouraging, said Wang Xue, who was in charge of the survey. We found more hotels and restaurants were willing to take action over the past year.
