線上期刊《Flavour》一份報告的作者指出,血腥瑪麗很可能是少數就算在空中飲用味道也不變的飲品之一。先前的研究顯現出大聲的噪音像是飛機引擎聲會削弱我們的味覺最高達到30%。

然而,「鮮味」可能會對此效應免疫。「鮮味」獲得第五味之名,接在甜、鹹、酸、苦之後,「鮮味」是種美味的味道,不只能夠讓食物有濃醇和多重的口感,經發現,也能夠增強其他基本的味道。番茄富含「鮮味」,這或許能夠解釋為什麼許多飛機乘客喜歡點以番茄汁為底的飲品。

雖說如此,先別急著捨棄開水然後一杯接著一杯狂喝血腥瑪麗,因為研究報告撰寫者說要證實他們的假說還得進行更多研究。

As it turns out, bloody Marys and tomato juice are the best beverages to order on a plane.

According to the authors of a paper in the online journal Flavour, a bloody Mary is likely one of the few drinks whose taste remains unchanged even when consumed in the air. Previous studies have shown that loud noises like an aircraft engine can impair our ability to taste flavors by up to 30 percent.

However, umami may be immune to this effect. Umami, dubbed the fifth taste, after sweet, salty, sour and bitter, is a savory flavor that can not only give foods a robust and complex taste, but has also been found to be able to heighten some of the other basic tastes. With tomatoes being rich in umami, this might explain why many fliers like to order tomato-based drinks.

That said, dont ditch water for bloody Mary marathons just yet for the authors say more research still needs to be carried out to confirm their hypothesis.
